The Method

How to make it

  1. 01

    Chill a stemmed glass in the freezer.

  2. 02

    Fill a shaker two-thirds with ice and add the Campari.

  3. 03

    Shake very hard for 15 seconds — longer than you think — until a pale foam forms.

  4. 04

    Double-strain into the chilled glass and express an orange twist over the top.

Bartender's Tip

Serve it immediately. The foam collapses in about ninety seconds, and once it does you are just drinking cold Campari from a warm glass.

A Little History

The shakerato technique comes from Italian caffè culture, where espresso is shaken with ice into a foamy cold coffee. Bar staff applied it to Campari during the aperitivo hour, and the result became a Milanese standard: no dilution left visible, just cold red liquid under a blush of foam.
