Cardamom does something no other warming spice manages: it is warm and cooling at once. The green pods carry eucalyptol, which reads as menthol, wrapped in a resinous, almost citric sweetness.
In amaro production, cardamom is a lifting agent. Blended with cinnamon, clove and bitter orange, it keeps a heavy root-driven maceration from becoming muddy, and it is a signature of both Ramazzotti-style bottlings and the newer American amari.
It also happens to be the most forgiving spice to experiment with at home — a single cracked pod in a two-ounce infusion will show itself within an hour.
